I "invented" the Chocolate Zucchini cake in 1977, for my son, the zucchini hater. I created the recipe for a recipe contest (the only one I have ever entered). I won a side of beef and ever since we have called my Chocolate Zucchini Cake, the "Side of Beef" Cake! LOL!<BR/><BR/>I love your blog, and as a "reformed Hippie", I still like to look for frugal pointers! We lucked into a $200US, "ding special" chest freezer last year to replace our 30+ year old upright freezer... Pie...Most of our desserts are built around fruits. Pies, crumbles and cobblers. I also have a zucchini bread recipe that is sweet enough for our tastes to be dessert. And I use our homemade apple butter to make cakes when the occasion calls for it, or breakfast muffins when we crave some. Certainly we don't eat dessert on an everyday basis. Having these two "problem" ingredients on hand just nudged me into baking this. I can't remember when I last baked a chocolate cake.
