Well I make veggie/tomato pasta sauce ...Hi Again,.<br />Well I make veggie/tomato pasta sauce the same way, cook it all up and put into hot sterilised jars and just seal with the olive oil and have just eaten the last jar with a 2009 label on... and it was fine. I do keep them in a cool store room though throughout the summer. I make ...Hi.<br />Really enjoying browsing your recipes.<br />I make roasted tomato puree in a slightly different way to this . <br />Maybe you would be interested? <br />I slice all my toms in half to a regualr size, add as you do, plenty of herbs and garlic and onions, but I put them in a roasting tin with olive oil and a good dash of Balsamic vinegar then roast them until they go gloopy and thicken. I then sort of stir and use a hand blender till its smooth puree. I will say that I can all my tomato sauce in a pressure canner, just to be on the safe side. So if you're in doubt about the acidity of you tomatoes, I guess I'd say go with the pressure canner.<br /><br />Anna, welcome, and thanks for leaving a calling card.<br /><br />safira, again, I'm no expert in canning. Sauces can be tricky because you can't safely treat the sauce as though it consisted only of the high-acid, main ingredient. The book Stocking Up recommends 40 minutes of water bath canning for hot packed pint jars of tomatoes alone, and 45 minutes for quart jars. As I said, I pressure can my sauce, so I couldn't advise beyond the above. The library is sure to have a good reference book though, and your county Agricultural Extension office, believe it or not, probably has someone on staff to answer such questions. It's the only one I prepare, and it's the foundation of a great many meals over the course of the year. Of course, it varies from batch to batch, depending on which herb I use for flavor, and whether I used leek or onion. Last year there was some variation due to different types of tomatoes too. It's developed for the wet weather and is very prolific!
