A Heroic Commitment to Leftover Consumption


These lovelies complemented my fried egg breakfast yesterday.  Potato pancakes made from the last of the Thanksgiving leftovers.  What's in them?  Leftover mashed potatoes (which had been made with milk, cream, and sauteed leeks), two sliced up scallions, a few twists of ground garlic (from our sliced, dehydrated garlic, placed in a peppermill), and a few tablespoons of flour to help the pancakes hold their shape better.  Knead all ingredients together with the hands, form the patties, pan-fry them gently in oil over medium heat, a few minutes each side, blot on pages torn from an old phone book.  Thank goodness the leftover ordeal is over, huh?  Yeah, life's tough.

My husband and I were committed to consuming our left overs as well! We used the sides with other main dishes for nearly a week. And I made a sweet potato soup from leftover mashed sweet potatoes. Way to not let food go to waste!!

They look darned delicious. No holiday leftovers here as we were traveling - I need to cook some turkey! Leftovers have been the menu here lately with so much going on and Tramp 1 knows if he doesn't eat something up the first time, it will be coming back in another form. We are in need of a change - last night's dinner was a kind of pizza like thing made with brown rice... Never again...

These look really good! Our leftovers are gone as of today as well. I canned just 3 pints of turkey meat and 2 more quarts of stock to finish it off.

Oh, they look great! I am the left-over queen! I so enjoy this sort of thing. I have made some interesting patties with left overs ~ always a hit!

I love using up left overs, we make bubble and squeak, which is left over potatoes, cabbage, peas, any veg really.. but I really like the look of your potatoe cakes...yumm

Mrs J, nice! I seriously considered soup for our leftover spuds. The pancakes won by dint of a spur of the moment breakfast craving.

2 Tramps, yes, traveling for turkey day saves some effort compared to hosting, but the hosts get to hog the leftovers! Brown rice pizza, eh? I'll take your word for it. And thanks!

Wendy, I take it you're of British extraction then, if not living in the UK. Doesn't bubble and squeak usually include sausage? Or am I conflating it with bangers and mash? - which I know has sausage in it.

You read my mind! I made potato croquettes with my leftover mashed potatoes!
